Does it really 'release the nutrients'? In my humble opinion, yes.
So basically, activating, also known as sprouting, helps the body digest and absorb the nutrients from our nutty friends because enzymes are activated (when soaked in water) and the breakdown process happens before we even take our first bite.
To be fair, research shows inconclusive results (as it does for 99% of other natural health therapies) but really, if you've got something that is going to improve your bodies' capacity to be supercharged from #superfoods, then why not?
Roasting nuts in a normal temp oven definitely DOES damage the heat sensitive enzymes, so if you're going to have nuts, always have raw - but if you're going to go raw, go the extra mile and have activated.
Activating nuts can be as simple as soaking overnight and heating in a low oven with the door cracked open on the lowest temperature - it will take a long time (as all good things do) so do this in advance to let those nutrients shine.
