Satay chicken - one of my favourites. But - feeling bloated after eating - not one of my favourites. At all. Using coconut cream and 100% natural peanut butter instead of the regular versions, it eliminates dairy, vegetable oils and added sugars - key culpruits which make you feel like crap. It's speedy, delicious and rich in vitamin E to make your skin glow.
Handful organic mixed leaves
1/2 Lebanese cucumber, sliced
2 tablespoons of coriander, chopped
100-150g poached / bbq chicken, ripped into slices
2 tablespoons crushed peanuts
2 tbsp coconut milk / cream (depending on desired consistency)
1 tsp 100% natural peanut butter - I used Pics, which I received in my Goodness Me Box
Wash and chop salad ingredients and mix in a bowl
Blend dressing ingredients together in a bowl until they are mixed - sometimes I pop mine in the microwave for a moment to help it come together.
Pour the dressing over salad and top with some extra crushed peanuts. Yum!
