Seeds often miss out when people talk about superfoods - like nuts, they have an incredible nutrient profile - high in omegas, healthy fat and fibre. Pairing them with kale (we all know you're in superfood city when kale is in the picture) and goji's with their antioxidants, and you've got yourself one nutritious dish.
Even better is that it takes about 4 minutes to make. Not even joking.
Shredded organic kale
Handful Mixed seeds - I used sesames and pepitas
Handful Goji Berries
Toss all ingredients together and serve - drizzle with a litle lemon / olive oil if you like too. x
