Protein pancakes are my ultimate indulgence: not because they are ridiculously unhealthy (cronuts, i'm looking at you), but because they taste like they are, however they are actually super healthy and definitely part of any diet I recommend.
1 scoop vanilla protein powder
1 mashed banana
almond milk to blend
1/2 tsp baking powder
1-2 tablespoons of coconut flour
2 tablespoons dessicated coconut - received in my Goodness Me Box
Fold all ingredients in a bowl together until just smooth
Add a few tablespoons of mixture into a medium heat pan which has been coated with a little coconut oil
I've topped mine here with heated frozen blueberries, dessicated coconut and a little rice malt syrup. Topping ideas area endless though - get creative!
