My second best dip creation ever (second to hommus - it just can't compare. Sorry guac, you're good, but the hommus is in a league of it's own). See, I love to entertain but don't want my guests to leave feeling stodgy - so serving this up is perfect and makes me feel like a good host. Win-win.
1 organic avocado
few roma tomatoes
1 small corn cob
1 tbsp pine nuts
1 tsp minced garlic
splash of vinegar
himalayan salt + pepper to taste
Combine all in a bowl - play around until the flavour is right in terms of the garlic and vinegar. Serve with gluten free crackers, on top of a green salad, to complement poached eggs or as a side to a grilled piece of chicken or fish.
