When in foodie doubt, a speedy salad with a simple dressing is the way to go. Wholesome, nutritious, and put together faster than you can hastag #cleaneating on your insta shot.
Roughly chop kale, cucumber, red onion, coriander and a few sundried tomatoes (I love these little babies, but not for everyone) and toss in a bowl.
Then in a bowl blend 1/2 a lemon, a teaspoon of Natvia (or your preferred natural sweetener) and some spices - your favourite dukkah, some cumin or praprika maybe) and massage it all together. Adjust to taste preference - are you feeling spicy today girl?
Top with your protein source and you're good to go.
